On OUR NAPA SHOW, a wonderful Jumbo Lump Crab Cake with Mango Relish appetizer, a succulent Blackened Filet Mignon followed by a Warm Chocolate Soufflé

AppetizerJumbo Lump Crab Cake
with Mango Relish

What you will need:

- 1 lb of jumbo lump crab meat
- ¼ cup of diced celery
- ¼ cup of diced carrots
- ¼ cup of diced onions
- ¼ cup of diced bell peppers
- ¼ cup of panko
- ¼ cup of mayonnaise
- 2 eggs

Salt and pepper to taste

Crab Cake
What you will do:

Shred crab meat and put into large bowl. Sautee vegetables and add to the crab along with the mayonnaise, panko and eggs. Season with salt and pepper and mix together. Form crab cakes to a silver dollar size. Sear in greased, medium high heat skillet till golden brown.
   
. Lemon Aioli sauce
- ¼ cup of mayonnaise
- 3 Tbsp of Meyer lemon juice
Whisk together
. Mango Relish
  Fresh mango chopped and mixed with chopped pencil thin asparagus

Entrée Blackened Filet Mignon

What you will need:

- 1 10oz prime filet mignon

Blacken seasoning

Sauce:

- 2 egg yolks
- 3 Tbsp Lemon juice
- 1 tsp Tarragon
- ¼ ounce of lobster meat

Salt and pepper to taste

Steak_crab
What you need to do:


Rub filet mignon with olive oil. Season with blackened spices and sear in a high heat skillet to your liking.
Beat the egg yolks to a thick paste.  Put in a sauté pan on a medium high heat.  Add lemon juice, dried tarragon, lobster meat and salt and pepper to taste. Pour on top of steak.

Dessert Warm Chocolate Soufflé

What you will need:

- 8 ounces of chocolate chips
- 2 cups manufactured cream (heavy whipping cream)
- 10 eggs
- 1 ½ lbs of cream cheese

Chocolate Soufflé
What you need to do:


In a saucepan mix manufactured cream and chocolate chips and cook on medium high heat, stirring frequently for approximately 5-10 minutes or until the mixture starts to boil.Remove from heat. Mix the cream cheese and eggs together then combine with the chocolate mixture. Grease the insides of 4 medium baking ramekins with butter and divide mixture equally between them. Cook in oven at 250 for approximately 40 minutes. Let sit for at least 15 minutes before serving.
. Crème Anglaise

- 1 cup heavy cream
- 2 vanilla beans
- 4 egg yolks
- 1 1/2 cups granulated sugar

 

In a saucepan combine the cream and sugar. Cook on medium high heat stirring frequently until it almost comes to boil, so the sugar dissolves. Remove mixture from heat, split the vanilla beans and scrape the insides into the mixture and slowly stir in the egg yolks. let sit for 1 hour before use.
